Abstract

This research aimed to identify meat species source in commercially processed  meats (mortadella) in the Syrian markets, imported and locally processed,  and to evaluate the conformity with the actual ingredients and the stated food labels by applying PCR-RFLP technique. Eleven different samples of  mortadella were randomly collected during the fifth month of  2018. The research was conducted in the National Commission for  Biotechnology laboratories, Damascus, Syria.

The results show that all imported mortadella samples were identical to their respective food labels in terms of meat species sources, while just three of  local samples were identical to the food labels and four of them were not identical to their respective food labels.
